Earlier this week I taught you how to make mayonnaise, and now I’d going to build on that valuable skill by providing a few more mayonnaise recipes to help you can get an idea of how versatile this little sauce really is. Sure, you can buy mayo at the grocery store, but it’s so easy to grab a mayonnaise recipe and make it yourself at home. Your homemade mayo will be far tastier, far creamier, and far cheaper than the stuff you’ll find at the local Safeway or Walmart. Trust me, it’s worth the whole three minutes it takes to whisk up a batch.

Today we’re making a mayonnaise recipe with a touch of curry powder. It’s such a simple thing to prepare, but that little touch of zesty curry zing! will really knock your favorite sandwich or cold salad out of the park. You might be surprised at how many dishes a touch of curry will compliment. Try it with French fries, chicken salad, or most cold cut sandwiches.

This mayonnaise recipe has a touch of spice with Indian curry, making for a zesty addition to your favorite sandwich or salad. Makes 2 cups of mayonnaise!

Ingredients

  • 1 large egg yolk
  • 1 teaspoon water
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground white pepper
  • 1/2 teaspoon white wine vinegar
  • 1 cup (8 ounces) of vegetable oil
  • 1 tablespoon yellow curry powder (or more, if you like it spicier)
  • 1/4 teaspoon ground ginger

Instructions

  • Combine the egg yolk, water, salt, pepper and vinegar in a large bowl. Whisk until they are well combined.
  • While whisking the egg mixture, add a few drops of oil to get the emulsion setup. Add a few more drops, and then a few more, all the while keep beating. Once you’ve got a good emulsion going, slowly drizzle in the remaining oil while whisking constantly. The finished product should be thick enough to cling to your tasting spoon.
  • Add curry powder and ginger, stirring gently. Taste your mayo, and add more curry or ginger if you prefer.
  • Keep in an airtight container in the fridge. Fresh mayo should keep well for up to a week.
