Springtime Edamame Hummus

Light Hummus Recipe

Edamame is such an awesome food. It’s great as a snack all by its lonesome, boiled for five minutes or so, then salted lightly and eaten. It’s bright green and tastes like spring time… what more could you want? How about if we were to turn it onto a hummus-like veggie dip? Yes, please!

This edamame hummus is perfect as a healthy snack. It whips up in literally 3 minutes, give or take a few seconds that it might take you to scrape down the sides of your food processor. It’s perfect for a party or just when you’re sitting around at home, debating what to eat for lunch. It’s super healthy and leaves you feeling great after you eat. How can you get better than that?

 

Springtime Edamame Hummus

While I generally love my edamame straight up, I also like to mix it up once in a while. Jill, a fabulous woman I know through a friend, brought the following recipe to a luncheon and it was devoured faster than anything else on the table. Edamame hummus - such a simple idea, but so good!

Ingredients

  • 2 cups cooked edamame
  • 1 tablespoon olive oil
  • 2 tablespoons tahini
  • 2 to 4 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1 teaspoon cumin
  • 3 cloves of garlic
  • Water to blend

Instructions

  • Blend and mix until smooth, adding water as needed to achieve a texture you like. Add more lemon, garlic, salt, or cumin to taste.

Notes

Experiment! Have fun! Everyone loves their hummus prepared a little different... make your own master recipe. I've added cilantro for an excellent flavor. The sky's the limit.
Serve with chips, crackers, pita, or whatever tickles your twinkie.
