4bone-in pork chopsthick-cut are best
Salt and fresh ground pepper
1tablespoonhigh-heat cooking oil
Instructions
24 hours a head of time, season pork chops on all sides with a generous amount of salt. Place the pork chops in a bowl, wrap the bowl in plastic, and set it back in the refrigerator until you're ready to cook the chops.
When you're ready to cook the chops, preheat oven to 425°F (218°C). Sprinkle the pork with a little freshly-ground black pepper.
Heat a large frying pan over medium-high heat. Add 1 tablespoon of oil and heat just until the oil shimmers.
Add pork chops to hot pan. Sear on each side until well browned.
Once all the pork chops are seared, slide the frying pan into the oven. Cook the pork chops for 15 to 20 minutes, until a meat thermometer inserted in the pork reads 140°F (60°C).
Remove the pork chops from the oven, cover with foil, and let rest for 5 minutes before serving.
