Ingredients
1poundsweet potatoespeeled and cut into 1/2-inch strips
Place sweet potato fries in ice water for about 15 minutes.
Preheat deep fryer, bringing the oil to 350°F (176°C).
Remove sweet potato fries from water and pat dry completely with paper towels. Slowly lower fries into hot oil and allow to fry for 5 minutes, or until the fries are golden-brown.
Remove from oil and allow to drain on a plate lined with a paper towel. Sprinkle with chopped herbs, salt and pepper, tossing together well. Sprinkle sparingly with cayenne and toss again. These fries go great served with a simple homemade ketchup or other sauce of your choice.
