Ingredients
1cup plus 1 tablespoonflour
1tablespoonsugar
1teaspoonbaking powder
1/2teaspoonbaking soda
1/4teaspoonsalt
1egg white
1wholeeggbeaten
3/4cupplain yogurt
1/3cupmilk

Instructions
In a large bowl combine flour, sugar, baking powder, baking soda, and salt. Mix well and set aside.
In another small bowl, beat egg white with an electric beaters until stiff peaks form. Set aside.
In a small bowl combine beaten egg, yogurt, milk, vanilla, coconut milk, melted butter, coconut oil, honey, and lime zest. Whisk quickly to combine.
Heat waffle iron to about 350 degrees, or midway in between it’s hottest and coolest settings. Grease waffle iron with a little butter – a silicon brush works great for this, as it won’t melt under the heat of the iron.
Once the waffle iron is at the correct temperature, add wet ingredients to the dry ingredients and stir, stopping as soon as there are no white lumps of flour left. Do not overmix. Gently fold in the egg whites with a spatula, folding just until the whites are mostly mixed in. There should be a few visible whites left here and there in the batter. Again, do not over mix.
Pour 1/2 cup of batter into the waffle iron and cook until the waffle is as crispy as you prefer, usually 2-3 minutes. Carefully remove waffle from the iron and set it on a plate in the microwave or other warm place. Re-brush the iron with butter and continue making waffles.
Place waffles on a warm plate, dust them with powdered sugar, and top with a dollop of creme fraiche. Serve with a wedge of lime and sprinkle with a squirt of juice just before eating.
* If you do not have any coconut oil, reduce cow’s milk to 1/4 cup, then add another 2 tablespoons of coconut milk and another 1 tablespoon of melted regular butter to the wet ingredients.
