While I generally love my edamame straight up, I also like to mix it up once in a while. Jill, a fabulous woman I know through a friend, brought the following recipe to a luncheon and it was devoured faster than anything else on the table. Edamame hummus - such a simple idea, but so good!

Ingredients
2cupscooked edamame
1tablespoonolive oil
2tablespoonstahini
2 to 4tablespoonslemon juice
1/4teaspoonsalt
1teaspooncumin
3clovesof garlic
Water to blend
Instructions
Blend and mix until smooth, adding water as needed to achieve a texture you like. Add more lemon, garlic, salt, or cumin to taste.
Notes
Experiment! Have fun! Everyone loves their hummus prepared a little different... make your own master recipe. I've added cilantro for an excellent flavor. The sky's the limit.Serve with chips, crackers, pita, or whatever tickles your twinkie.
